OUR SHUCKING PROCESS
shucking
The personnel of this area are trained in such a way that if there is a deviation (dead parts, foreign materials) they will immediately communicate to the supervisors and quality assurance technicians. All waste such as leaflets, algae, etc., are evacuated by means of mechanical belts.
Washed
The washing process removes remnants of viscera, foreign materials, etc. It is performed after the deflection and disembowlment until the embolization process. Washing is done with water from a system of pipes with CRL.
Reviewed
Select the product according to what is required by the customer and eliminate the remains of undesirable organic matter that may exist. This process is carried out from washing to weighing.
Weight
Provide an adequate weight to the product according to what is required by the customer. The TAC verifies the correct operation and calibration of the balances.
Encoded
Continuously verify the count (pieces by code), classify the product by size and its degree of uniformity. Record the results in the packaging control record, and separate the parts with defects.
Labeling and Dispatch
Maintain the quality and sizes established until it reaches its destination (freezing plant). Maintain product traceability with correct labeling. In addition to preserving the cold chain until it reaches its destination.
